Potato Sausage Soup

Ingredients –

– 4 cups small diced boiling potatoes
– 1 large onion, chopped
– 1 tsp salt
– 3 cups boiling water
– 1 lb COOKED ground turkey sausage (drained of fat)
– 1/2 tsp sage (or more to taste)
– 2 springs parsley, chopped

Simmer potatoes, onion, salt and water, covered, for 15 minutes or until potatoes are soft. Run through ricer (or use potato masher). Add sausage, sage and parsley. Serve with cream or evaporated milk at table.

To freeze: Freeze base (before addition of cream) then reheat well before serving. Can be kept frozen 2 months.
