This recipe is from Mom. She likes to make this for brunch.
Ingredients –
– 4 eggs
– 1 T. butter
– 1/2 c. biscuit mix
– 1/2 t. salt
– 2 c. milk
– 1/2 lb. Swiss cheese, cut into sm. cubes or grated
– 10 oz. pkg. grozen spinach, thawed and chopped Nutmeg
Heat oven to 425 R. Butter and flour 10-inch pie plate. Pace a layer of cheese in pie plate then add spinach. Mix first five ingredients in blender 30 to 40 seconds. Pour over cheese and spinach. Sprinkle nutmeg on top. Bake at 425 F. for 10 minutes then lower temperature in oven to 350 F. and bake until brown and a knife inserted in center comes out clean (about 40 minutes). Let cool 5 to 10 minutes before serving.
