This is a recipe that I used when working at Girls Club in St. Louis. They have a nice flavor and texture. Use 1/2 cup shortening and 1/2 cup butter for different texture.
Ingredients –
– 1 c. butter
– 1 c. sugar
– 1 egg
– 1/2 t. vanilla
– 2-1/4 c. all-purpose flour
– 1 t. baking powder
– 1/4 t. salt
In large mixing bowl cream butter, sugar, egg and vanilla until light and fluffy. Mix in flour, baking powder and salt. Divide dough in half and form into 2 balls. Cover and refrigerate for at least 2 hours.
Preheat oven to 375 F. Roll dough 1/4 to 1/8 inch thick on lightly floured board. Cut shapes with 2 or 2 1/2 inch cookie cutter. Place 1 inch apart on ungreased baking sheet. Bake at 375F for 7 to 9 minutes or until light golden brown around edges. Remove to cooling rack.
