Ingredients –
– 4 c. flour
– 2 t. baking powder
– 1 t. baking soda
– 3/4 t. salt
– 1 c. butter
– 2 c. sugar
– 4 eggs
– 1 c. mashed ripe bananas
– 8 ounces crushed pineapple, undrained
– 1 c. shredded coconut
Preheat oven to 350 F. Sift flour, baking powder, baking soda and salt together in small bowl. Set aside. Cream butter and sugar together in large mixing bowl. Beat until fluffy. Add eggs. Mix well. Stir in mashed bananas. Stir in dry ingredients until just moistened. Fold pineapple and coconut into batter until well mixed. Turn into 2 greased 9 x 5 loaf pans. Bake 350 F about 70 minutes or until toothpick in center comes out clean. Cool on rack. Makes 2 loaves.
