Ingredients –
– 1-3/4 c. sifted flour
– 2 t. baking powder
– 1/4 t. baking soda
– 1/2 t. salt
– 1.3 c. butter
– 2/3 c. sugar
– 2 eggs
– 1 c. ripe banana, mashed
– 1 c. fresh or frozen blueberries (unthawed)
Preheat oven to 350 F. Grease 1 (9x5x3) loaf pan. Sift together flour, baking powder, baking soda and salt. Set aside. Cream butter. Gradually beat in sugar until light and fluffy. Beat in eggs one at a time. Add flour mixture and bananas alternately in three parts, starting and ending with flour mixture. Gently stir in blueberries. Spoon into greased pan. Bake at 350 F for 50 minutes. Turn out of pan to cool.
