This is a favorite breakfast food of mom’s. She would freeze these and use them one at a time for breakfast.
Ingredients –
– 1/4 cup sugar
– 1 egg, well beaten
– 1-1/2 cups mashed bananas (about 3)
– 1 c. bran (found in bulk food departments of grocery store or health food stores)
– 1-1/2 cups sifted flour
– 2 t. baking powder
– 1/2 t. salt
– 1/4 vegetable oil Pecan halves (optional)
Stir egg and sugar together. Add mashed bananas and bran; mix thoroughly. Sift flour, baking powder, and baking soda together; combine with banana mixture, stirring just enough to blend. Add oil and mix. Fill greased muffin pans 2/3 full. Place pecan half on each muffin Bake in moderately hot oven (375 F) 20 to 25 minutes. Makes 12 muffins
