Ingredients –
– 1med onion, diced
– 2 tablespoons olive oil
– 1lb carrots, sliced
– 3 stalks celery, sliced
– 1 lb sirloin tip, cubed
– 1lb mushrooms, sliced small
– 3 #2 cans beef broth (about 8 cups)
– 2 #2 cans diced tomatoes
– 3 tablespoons parsley
– 1/2 to 1teaspoon fresh ground pepper
– 1tsp thyme
– 1/2 cup barley
Sauté onion in oil until browned. Add celery and sauté till soft. Remove from pan, leaving oil. Add sirloin and sauté until browned. Add mushrooms and sauté. Put all ingredients, except barley, in soup pot. Bring to a boil, then simmer 1/2 to 1 hour at low heat. Add barley and simmer 1hour more.
Excellent with fresh bread.
