Corned Beef and Cabbage

1 2 ½ to 3 lb. corned beef brisket, with spice mix

1 lb. baby carrots

2 lbs. approximately, new potatoes

1 bottle of beer

1 onion, roughly chopped

Ground pepper

1 small head of cabbage, cut in wedges

In crockpot place the carrots and potatoes.  Place the corned beef with juices on top of these.    Add one can or bottle of beer then the spice mix packet.  Lay onion on top.  Sprinkle with ground pepper.  Cook on low for 7-8 hours or on high for about 4 hours until done vegetables pierce easily.

Remove corned beef and place on cutting board.  Let sit 10 minutes.  Remove all vegetables.  Pour juice into pan on stove, bring to boil.  Add cabbage.  Steam until cabbage is tender.  Slice corned beef.  Serve.
