This is a family favorite. Only problem is, there is never enough to go around! Mom used to have okra in the garden, but it is very “itchy” to pick. The small tender okra is best.
Ingredients –
– Fresh Okra
– Flour
– Salt
– Pepper
– Oil
Clean okra and cut into medium-thin slices. Place in a bowl Add 2-3 heaping tablespoons flour with salt and pepper sprinkled on top. Mix until coated. In heavy skillet, heat 2 tablespoons oil until hot, add floured okra. Fry over medium heat, until okra is no longer gooey (this can take 20-30 minutes and you may need to add more oil).
