This is a delightfully different type of salad with a sweet dressing. A graduate student in Reno, Sherry Waugh, gave me the recipe.
Ingredients –
Dressing:
– 1/2 c. oil
– 1/4 c. vinegar
– 1/4 c. sugar
– 1/2 t. salt
Salad:
– 6 c. torn romaine lettuce
– 1c. torn spinach
– 1c. seedless grapes halved
– 1/4 c. toasted slivered almonds
– 1lg. can of mandarin orange segments, chilled and drained
In small jar with tight-fitting lid, combine all dressing ingredients; shake well in large bowl combine lettuce, spinach, grapes, almonds, and orange segments. Just before serving, toss some of dressing with salad.
