Grilled Cumin Chicken

Ingredients –

– 2 broiler fryers, quartered (2 1/2 – 3 pounds)
– juice of 3 lemons
– 2 tablespoons vegetable oil
– 2 tablespoon ground cumin
– 1 tablespoon salt
– 1 tablespoon coarsely ground pepper
– 2 1/2 teaspoons celery salt
– 1/4 teaspoon red pepper

Place chicken in large shallow dish; pour lemon juice over chicken. Cover and chill 2 to 3 hours, turning once. Remove chicken from lemon juice, rub with oil. Combine remaining ingredients; stir well. Sprinkle seasoning over chicken. [Place some under skin.] Place chicken, skin side up, on grill Cook over medium-hot coals 30 to 35 minutes or until done, turning once. Yield: 8 servings. Southern Living, 1987 Annual recipes.
