This salad is the same as they serve at Pasta House Company Restaurants and also Rich and Charlies’ Restaurant. If you make it too far ahead, the lettuce will lilt, but! like it that way!
Ingredients –
– Small head iceberg lettuce
– Small bead romaine
– 1 can drained artichoke hearts/ quartered
– 1 large purple onion sliced and separated
– 1 jar pimentos (diced)
Dressing:
– 1/2 c. oil
– 1/3 c. cider vinegar
– 1 c. Parmesan cheese
Shake up well. Pour dressing over lettuce and toss. Let stand 1hour. If too thick, thin with vinegar
