Ingredients –
For topping:
– 1 T. flour
– 5 T. sugar
– 2 t. cinnamon
– 1 T. butter, softened
For loaf :
– Nonstick cooking spray
– 3 c. flour
– 3/4 t. salt
– 2 t. baking soda
– 2 t. ground cinnamon
– 1 t. ground nutmeg
– 1 t. ground cloves
– 1/4 t. ground allspice
– 1 (16-oz) can pumpkin
– 3/4 c. vegetable oil
– 4 eggs, lightly beaten
– 2 apples, such as Granny Smith, peeled and chopped (about 2 cups)
To prepare topping: In a bowl, blend flour, sugar, cinnamon and butter to make a coarse meal. Set aside.
Preheat oven to 350 degrees.
To prepare loaf Spray two (8 or 9 inch) loaf pans with cooking spray. In large bowl, sift together flour, salt, baking soda, cinnamon, nutmeg, cloves and allspice. In another bowl, mix together pumpkin, oil, sugar and eggs. Add flour mixture; stir to combine. Fold in apples. Divide batter between pans. Sprinkle topping evenly over batter. Bake 50 to 55 minutes or until a tester inserted into center comes out clean. Let cool about 45 minutes in pan; remove to wire rack to let cool completely. Yield: 2 loaves.
