Pumpkin Pie

This recipe is the one Mom and Monica always make and it has just the perfect blend of spices!

Ingredients –

Mix together:

– 1 c. sugar
– 1-1/2 t. cinnamon
– 1/2 t. cloves
– 1/2 t. allspice
– 1/2 t. ginger
– 1/2 t. nutmeg
– 1/2 t. salt

Blend together in large bowl:

– 2 eggs, beaten
– 1-1/2 cups cooked pumpkin (1 small can)
– 1-2/3 cup evaporated milk (1 can)

Then add dry ingredients and mix well. Pour in 9″ unbaked pie shell. Bake at 425 F for 15 minutes. Reduce Temperature to 350 F and continue baking for 45-50 minutes or until knife inserted in center comes out clean.

(You may cut the sugar to 3/4 cup and use Egg Beaters in place of the eggs.)
