Contributed by Louise Kelley. This is a Christmas Tradition. You need a special rolling pin and also need to find a place that will supply the hartshorn.

Ingredients –

– 5 whole eggs
– 1 teaspoon hartshorn crystals (powdered)
– 12 drops anise oil
– 4 cups flour
– 1 lb. powdered sugar

Beat eggs until they are thick and lemon-colored. Pour in powdered sugar gradually and beat while anise oil and powdered hartshorn are added. When crystals have dissolved, stir in sifted flour a little at a time. Turn dough out on a lightly floured pastry board and roll to about 1/2 inch thick. Cakes are cut out and allowed to dry for 2 to 3 hours before they are placed on a cookie sheet lightly greased with oil. Bake at 300 F. for 13 minutes. ( Hartshorn Crystals can be gotten from the drugstore.)
