Sometimes called Mexican Wedding Cakes, these are very rich. Don’t let them get too brown though!
Ingredients –
– 1 cup butter, softened
– 1/2 cup powdered sugar
– 1/2 teaspoon vanilla
– 2-1/4 cup flour
– 1/4 teaspoon salt
– 3/4 cup finely chopped pecans
Mix together butter, powdered sugar, vanilla. Mix together flour and salt and add to the butter mixture. Mix in pecans. Chill until firm. Roll into one inch balls place on cookie sheets 2-1/2 inches apart. Bake until set 10 – 12 minutes at 400 F. Roll in powdered sugar while still warm.
