Crumb Top Coffee Cake

Ingredients –

– 1/2 c. margarine
– 1 1/2 c. flour
– 1 c. packed brown sugar
– 1 1/2 t. baking powder
– 1/2 t. cinnamon
– 1/2 t. salt
– 1 egg, beaten
– 2/3 c. milk

Cut 1/4 c. margarine into flour and sugar until mixture resembles coarse crumbs; reserve 1/2 c. for topping. Stir in rest of dry ingredients; cut in remaining 1/4 c. margarine until mixture again resembles coarse crumb. Add combined egg and milk, mixing just until moistened. Pour into greased and floured 8″x8″ pan; sprinkle with reserved crumbs. Bake at 375 F, 35 – 40 min. or until wooden pick inserted in center comes out clean. Serve warm.
