Ingredients –
– 3 slices of bacon diced
– 1/2 c. chopped onion
– 1/2 c. green pepper
– Okra
– 2/3 c. uncooked rice
– 1-1/3 c. chicken broth
– 1 t. salt
– 1/8 t. pepper
– 1 fresh tomato, peeled and chopped
Cook bacon, keep 1 T. drippings. Add onion, green pepper and okra. Cook until vegetable are tender crisp. Stir in rice, broth, etc. Bring to a boil; reduce heat. Cover and simmer for 15 min. Add tomato and fluff lightly. Replace lid and let stand for 10 minutes.
