Make sure your biggest bowl to mix this batter
Ingredients –
– 2 c. firmly packed light brown sugar
– 2 c. sugar
– 2 c. vegetable oil
– 4 eggs
– 1 t. vanilla
– 4 c. flour
– 2 t. baking soda
– 1 t. baking powder
– 1 t. salt
– 4 c. corn flakes
– 2 c. flaked coconut
– 1 12-ounce package chocolate chips
– 1-1/2 c. quick-cooking oats
– 1 c. chopped pecans or walnuts
Preheat oven to 325 degrees. Cream sugars, oil, eggs and vanilla. Stir in flour, baking soda, baking powder and salt. Add corn flakes, coconut, chocolate chips, oats and nuts. Mix well. Drop from a teaspoon onto ungreased cookie sheets. Bake 10-12 minutes. For variety, substitute butter-scotch chips in half of the batter. These freeze well. Make 8 to 10 dozen.
